Apple Chutney


6 apples peeled, cored and diced
¼ cup dried blueberries
1 teaspoon lemon zest
¾ cup white wine vinegar
1 tablespoon lemon juice
2 ounces grated fresh ginger
¼ cup sugar
Pinch fresh ground pepper
Pinch kosher salt

Combine all ingredients in a small saucepan over medium heat. 

Cook, stirring gently until almost all the liquid has evaporated and apples are cooked through (about 6-8 minutes).

Remove from heat and let cool.
