Lavender Lemonade
Note: Lavender simple syrup has to sit overnight
2 cups sugar
1 teaspoon cooking lavender
5 medium lemons, juiced
1 tablespoon lavender honey
Make lavender simple syrup by combining sugar and cooking lavender to 1 cup of water in a saucepan. Bring to a simmer over medium heat until the sugar dissolves, about 7 minutes. Remove from heat and allow to cool overnight in refrigerator. Strain to remove lavender buds. Syrup will be dark in color.
To make lemonade, in a large pitcher, combine 6 ounces of lavender simple syrup with the lemon juice, hone and 16 ounces of water. Pour over ice and garnish with a lavender sprig.
Serve as is or spike with your favorite citrus vodka.
